Ajoarriero is a mortar paste made of garlic, potatoes, egg and olive oil of Basque origin. The name appears to derive from the muleteers (arrieros) who may have invented the dish. It is most famously used in Bacalao al ajoarriero, a salt cod dish often with red peppers. Recipe
