Cuajada – milk curd
Cuajada is milk curd. It a common staple dessert in Spain, served with honey and walnuts and the like. It was traditionally heated with a red-hot poker, giving it a distinct faintly burned taste.
It was more frequently made from ewe’s milk, but these days is more often manufactured from cow’s milk. Personally I don-t like the stuff.
Cuajada literally means ‘curdled’ in Spanish.
